Salamoia Bolognese

This is a traditional Italian seasoning used in many recipes which originates from Bologna in Italy. Pronounced “Sarla-moy-ah” it can be used to season roasts, add to a sugo or sprinkle over your  baked potatoes prior to cooking.  You may not know much about the city of Bologna, other than it being the city where Bolognese Sauce (or as the Italians say… Ragu) originates. Other famous dishes from this area include tortellini and lasagna.

Salamoia is a very simple seasoning combining salt, pepper, rosemary and garlic which can turn a simple dish into an amazing one. If you do not use all of it, keep it refrigerated for up to one week, or freeze small portions in an ice-cube tray. It you would prefer to keep this seasoning stored in a jar over a longer period of time, switch the rosemary over to a dried variety and use 2 tsp garlic powder instead of fresh garlic cloves.

What you will need:

2 tbs Rock Salt

2 tbs fresh Rosemary

2 Garlic cloves crushed

1 tbs black peppercorns

Mix together in a high powered blender, and use as required.
