Simple Guacamole


Avocado prices in Australia will vary substantially from one week, to the next. So when I spot them at the local fruit shop priced a 3 for $2 , I buy up (don’t we all just love a bargain?).

It’s handy to know that once an avocado is picked, it takes between 7 and 10 days to ripen. Keeping it in the refrigerator will slow down the ripening process, while putting it in a paper bag with a ripe apple will speed up the process.

Nonetheless, there are times when I end up with just a few too many ripe avocados. So what to do with them? Make Guacamole of course!

This is a very simple recipe for Avocado dip, so we will keep it short. But just one little hint, if you don’t have lime, use lemon instead!

Guacamole is traditionally served with a good quality white corn chip!

What you will need:

1 avocado

1/4 red onion (optional), finely sliced

1 tbs olive oil

1 lime

6 ripe cherry tomatoes, roughly chopped

Salt & Pepper

How To Prepare:

Using a blender or mixer, chop and blitz the avocado, lime and olive oil until smooth. Remove and place the blended avocado into a small mixing bowl.

Add the onion and tomatoes, mix with a spoon.

Season with salt and pepper.

Serve.
