I whipped up my first batch of these bikkies nom, nom, nom on the weekend. Since then nom, nom, nom ... I have to admit nom, nom, nom … I’ve rediscovered my inner Cookie Monster… nom, nom, nom.
This is a very simple cookie recipe using the natural flavour of lemon combined with lots of crunch. We suggest you make these when you’ve got friends visiting, or you might just be tempted to eat them all.
What you will need:
110g unsalted butter, softened
1/3 cup caster sugar
1/3 cup raw sugar
1 egg
125g plain flour
1/2 tsp salt
1/2 tsp bi-carbonate of soda
grated rind of 2 lemons
1/2 cup shredded coconut
2 1/2 tbsp linseed meal
2 1/2 tbsp chia seeds
How to prepare:
Cream the butter and sugar until pale and fluffy. Add the egg and continue beating for a further minute or two.
Add the remaining ingredients and stir until it is all well combined.
Spoon the mixture onto a piece of cling film, into a log shape. Roll up the cling film and press the cookie dough to make a log which is approximately 4-5cm in diameter. Refrigerate until firm. At this stage, you can freeze the dough for use at a later date.
Preheat the oven to 180°C. Unwrap the cookie dough. Slice the dough into 1 cm discs, and place onto some baking paper. Ensure to use a large tray, allow plenty of room (at least 5-10cm) for the cookies to spread and expand on the tray. Bake for 12 minutes.
