Loaded Vegetarian Grain Salad

Certain times of the year, all hell breaks loose (ie End of Financial Year, Christmas, Easter and everything in between) when you literally don’t have time to scratch yourself. That’s when you need to bring on the heavy artillery and prepare a double quantity of this salad!

Packed with a long list of super healthy ingredients, it will keep your energy flowing long after the caffeine has worn out.

Loaded-Vegetarian-grain-salad

1 cup quinoa, washed and cooked as per packet instructions

2/3 cup lentils, cooked and drained

1/2 cup slivered almonds, toasted

2 cups chopped kale

1/3 cup of cranberries

1/2 cup of parsley or coriander

2 tbs barberries

1 cup fresh pomegranate

1 tbs black & white sesame seeds

2 tbs pepitas

2 tbs linseeds

2 tbs sunflower seeds

2 tbs chopped chives

2 tbs chopped mint

Dressing

1 tsp raw honey

juice of one lemon

1 tsp ground cumin

salt & pepper

To serve: add a dollop of greek yogurt (optional)

In a bowl, whisk together the ingredients for the dressing.

Combine the remaining ingredients in a large bowl. Pour over the dressing. Toss.

This salad will keep for several days if stored in an airtight container in the fridge.
