There seems to be a growing number of claims regarding the health benefits of the humble pomegranate. Similarly, we also see an increase in the number of pomegranate derived products in the health food store. (I sense you may be asking a “chicken or egg” question). In the meantime, while Western Science continues it’s research into the benefits and therapeutic use of pomegranate, I’m more than happy to add them to my salad.. coz they taste good!!
1 cup mixed quinoa, cooked and drained as per packet instructions
1 can beans (kidney, cannellini etc), drained
1 cup fresh pomegranate
1/4 red onion finely sliced
1/2 diced capsicum
1 finely diced (or grated) carrot
1 cucumber, deseeded and diced
1 cup cherry tomatoes, halved
1-2 tbs of sesame seeds
Dressing
Juice of one lemon
1 tsp honey / or rice malt syrup
2-3 tbs olive oil
salt & pepper
Combine the ingredients for the dressing in a small bowl and stir.
Combine the remaining ingredients in a large salad bowl. Pour over the dressing and toss gently. Adjust seasoning if necessary.
